There are so many fun ways to naturally dye Easter eggs, like with red cabbage, coffee, red wine, beetroot, and even onion! And after the holiday is over, you’ll have more eggs than you’ll know what to do with. So, take those beautiful, leftover eggs and make a scrumptious (Fiesta-themed) egg salad! Viva Fiesta!

- 2 hard-boiled eggs mashed, or finely chopped
- 1 avocado mashed
- 1 jalapeño seeded, and finely minced
- 1 tablespoon red onion minced
- 1/2 lime juiced
- 1/2 teaspoon Garlic powder
- salt and pepper to taste

- In a bowl, add all of the ingredients and mix thoroughly. To help blend the flavors, chill for several hours.
- Serve with veggies, crackers or make a sandwich!
